ペルーといえばセビーチェである。

黒貝のセビーチェや生のカニのセビーチェは逸品である。

ちなみに、ペルー料理は世界的にも非常にレベルが高いことで有名である。

イタリア料理、ドイツ料理、韓国料理。全てペルーから始まったと言っていい。

つまり、トマトも、トウモロコシも、ジャガイモも、唐辛子もその他諸々全てペルー・アンデスが原産なのだ。

日本ではあまり出会わなだろうが、ペルー料理を知らずして料理は語れないのだ。
