長年の疑問だった。いや疑問というよりも不満だった。

鴨ネギそばにはすでに葱が入っている。当たり前だ。

何も拘らず、他の蕎麦と同じように薬味にネギをつけてくるのはいかがなものだろうか？

蕎麦屋として漫然と生きていて、薬味つけておけばいいや〜ぐらいなのだろうか。

ちょっと違うだろう。

と考えていた。

しかし私の方が理解していなかったのかもしれない。

煮た葱と刻んだ葱は異なるのだ。

確かに口の中はさっぱりする。

うん。そういうことなのか。
